I went to college at Oregon State University in Corvallis, OR. A VERY small town and not that many choices for food if you don’t count the residence halls. One thing i love and miss is the salad bar at Ruby Tuesday’s. Not only do they have the best croutons ever in existence but they have a pasta salad I always go back for seconds on. With it being Memorial Day weekend and pasta salads being a staple I thought I would remake this recipe by taste remembrance. I must say i got pretty spot on!
1/4 Bell pepper minced
1 green onion
1/2 ham steak (about a 1/4 cup chopped)
1/4cup mild cheddar cheese
1/4cup ranch dressing
1 squirt Dijon mustard
1tbsp white wine (into the recipe and one cup into a wine glass)
8oz Gemelli pasta
1/4 cup peas
1 grated garlic clove
Salt and pepper to taste
