Grown Up Grilled Cheese

In honor of Wine Wednesday here is a recipe that you can cook even if you get a little bit tipsy. Plus all the flavors go great with wine, red or white. My friends and I have turned Wine Wednesday into an excuse to get together during the week and its religious at this point. It’s an appointment that I can’t bare to miss lol! So grab the wine, Β make this yummy dinner and, sit down for some major girl talk. (You earned it!)



1 tbsp Dijon Mustard

2 tbsp Butter softened

3ozΒ Brie Cheese (rind removed)

Cheddar Cheese (pre-sliced)

Whole Wheat Bread

Roasted Tomatoes

1tbsp Chipotle Mayo

– Mix together the dijon mustard and the butter until smooth. Spread on each side of the bread. (The other girls wanted to try a Chipotle mayo on the outside, just as yummy!)

-Layer in cheese with two slices cheddar on the outside and put the brie and roasted tomato in the center (I just baked off the tomato with salt and pepper until soft)

– Preheat a skillet to medium high. Β Reduce slightly and add the sandwiches cooking until golden brown for 6-9minutes each side moving around to ensure cheese is melted.

Serve with tomato soup or what ever soup you like and don’t forget the wine (it is Wednesday after all). Wine goes with everything.
