More Weeknight Meals

Yes, I know I complain about cooking during the week but, I always manage to get the job done. The satisfaction of knowing I have a healthy dinner and lunch for the next day is great encouragement! More importantly I love to cook and my roommate loves my cooking so I constantly want to cook lol. What can I say I love that girl and I love to eat! Here are a couple more weeknight meals that are super easy and more importantly delicious.


-Preheat the oven to 400 degrees. Line two baking sheets with foil. Cut the potatoes in ½ and in ½ again. They should be fork size. Chop the peppers and onions into oversized pieces.

-Add Vegetable oil to the bottom of a large bowl. Add the potatoes and toss. Season and toss again. Lay out onto a baking sheet (I like to do the potatoes separate from the veggies as they take longer. Do the same thing to the veggies and add to the other baking sheet. Cut up the sausage into bite size pieces and snuggle it in with the potatoes.

-Place both baking sheets into the oven. The potatoes will take about 45min. You can check with by poking with a fork and if they are fork tender they are ready. Take out veggies in about 30min. Cook until tender.

-Fair warning this will make your kitchen smell amazing. It’s super easy but the payoff is amazing. This was enough for dinner and two lunches and I also chopped it up into smaller pieces, reheated and, added an egg for breakfast.


-Chop the bacon into small pieces and chop the broccoli into bite size pieces. Turn on the oven to 400 degrees and line a baking sheet with foil. Add the broccoli and bacon to the sheet and season with salt and pepper. Grate garlic on top. Place in the oven and bake until the broccoli has started to brown on the flowerets. Should take about 15min toss in between.

-Cook the pasta according to the package directions but cut the time so the pasta won’t over cook when baked. Add the pasta to a large bowl when done and add the broccoli to that.

-Take the chicken and butterfly. Season with salt and pepper and lightly flour. Preheat a pan with coconut oil (1st time trying this out! Watch the smoke point, you can use other oils if you don’t have coconut)

-Cook the chicken until brown on both sides takes about 8min a side. (cook until all the way done) Add the chicken to the bowl and add the Alfredo sauce. Toss until everything is coated with sauce and add to a 9×13 baking pan. Top with parmesan cheese and bake in a 375 degree oven for 30min.

-Serve with homemade garlic bread and wine lol. This meal was huge. We ate it for lunch and throughout the weekend.
