So I have this pineapple that I used for a shoot last week (my lovely friend Jenni was lovely enough to bring it by) Check out the POST and better yet check out her BLOG (insane I inspired someone to give blogging a try)!
I am not one to waste food even if it was just a prop so I had to think of something to use a pineapple for. Oddly I am not a fan of Hawaiian Pizza (I just don’t like hot pineapple lol) but, this recipe may have changed my mind. This recipe was completely made up and a perfect use of some good leftovers.
- BBQ Pork Loin (we had some leftovers that were pre-cooked)
- 1 Cup BBQ Sauce
- 1 Cup Water
- ¼ Chopped Pineapple
- 1 Red Bell Pepper
- 1 cup Mexican Cheese Blend
- 10” Tortillas (flour or corn)
-Take the meat and cut into small pieces. Add to a shallow pan with one cup BBQ Sauce and one Cup water. Cover and bring to a boil. Simmer for 45min. Remove the lid and allow the water to cook out. This will turn the pork loin into perfect pulled pork.
-Meanwhile chop the pineapple and red bell pepper into bite size pieces. Add to the pork while the water is cooking out which will cook the veggies and coat them with sauce.
–NEW PRODUCT ALERT!! So my roommate loves these tortillas from Costco. They are cook and serve which means fresh tortillas! To make a quesadilla I cooked them on one side 1st and then used that as the center of the quesadilla.
-Add cheese to the cooked side of the tortilla and layer on the meat mixture. Next cover the mixture with cheese and place a tortilla on top cooked side down.
-On a large flat pan at medium heat cook the quesadilla on both sides until the cheese is melted and the tortilla is crisp.
This quesadilla was served with a simple coleslaw of cabbage, carrots, mayo, and apple cider vinegar. Super simple but gives you that BBQ meal feel. Give this recipe a try would be great with red onion and cilantro or use whatever you have at home! Happy Wednesday QT’s!
