Grilled Apricots

I love to bake it is one of my favorite things to do and while I have all these ideas in my head… it is way too hot!!! I have visions of cupcakes and apple crisp but that must all wait. So what is a girl to do for dessert at a time like this?? Well I took dessert to the grill and I must say the results were beyond amazing!!

Grilled Apricots

  • 3 apricots
  • ¼ cup brown sugar
  • 3 tbsp olive oil
  • Vanilla Ice cream
  • ½ cup animal crackers

The apricots I got were mostly ripe so it was hard to get them to come away from the pit. So rather than bruising the flesh just cut it away from the core the way you do an apple.Coat the fruit with the brown sugar and olive oil. Add other items if you like such as cinnamon, nutmeg, or clove.


Preheat the grill to about 200 degrees. You are grilling the apricots to add grill marks and caramelize the sugar. Place the fruit pieces on the grill skin side down and do not move them. Cook for about 5-10 min on each side until you see defined grill marks.


Remove from the grill and serve with vanilla ice cream and crushed up animal crackers or whatever cookies you have it adds some much-needed crunch! What’s great about this recipe is you could use any kind of fruit. Try out peaches, pineapple, or even apple slices.
