Grilled Apricots

I love to bake it is one of my favorite things to do and while I have all these ideas in my head… it is way too hot!!! I have visions of cupcakes and apple crisp but that must all wait. So what is a girl to do for dessert at a time like this?? Well I took dessert to the grill and I must say the results were beyond amazing!!

Grilled Apricots

  • 3 apricots
  • ¼ cup brown sugar
  • 3 tbsp olive oil
  • Vanilla Ice cream
  • ½ cup animal crackers

The apricots I got were mostly ripe so it was hard to get them to come away from the pit. So rather than bruising the flesh just cut it away from the core the way you do an apple.Coat the fruit with the brown sugar and olive oil. Add other items if you like such as cinnamon, nutmeg, or clove.

Preheat the grill to about 200 degrees. You are grilling the apricots to add grill marks and caramelize the sugar. Place the fruit pieces on the grill skin side down and do not move them. Cook for about 5-10 min on each side until you see defined grill marks.

Remove from the grill and serve with vanilla ice cream and crushed up animal crackers or whatever cookies you have it adds some much-needed crunch! What’s great about this recipe is you could use any kind of fruit. Try out peaches, pineapple, or even apple slices.

Girls on the Grill

Hey there friends!! I know its been a week and I usually don’t go that long without talking to you but…. This new job has been taking over my life. I am working hard at getting back into design and trying to see where blogging fits into all of that. So do not worry!! I have not abandoned you and I am hoping that this new job will inspire me to create new and fresh content especially for you!!

My college girls are in town yet again because what can I say Portland is pretty amazing. We spent yesterday out by the pool soaking up the sun and of course I had to hit them with a few amazing recipes! Grilled Steak and Veggie Kabobs

  • Sirloin steak (16oz)
  • Red, green, and yellow bell peppers
  • 1 large yellow onion
  • ¼ cupRed wine
  • drizzle olive oil
  • Salt and Pepper
  • Frontera al pastor marinade

Cut the bell pepper and onions into 2” pieces make sure you don’t cut them too small, as they need to maintain their integrity on the skewer.

Cut the steak into 2” pieces and add to a zip lock bag and add the al pastor marinade, red wine and, olive oil. Place into the fridge for at least 3hrs.

Soak wooden skewers in water while the meat is marinating. When putting the kabobs together start first with a veggie with the flesh side in and then alternate with meat. Make sure to leave room on each side. When they are all finished sprinkle with salt and pepper.

With the grill on medium high about 350 place the kabobs on. They will take about 15min so flip ½ way through the grilling time. I like my beef on the rare side so grill longer if you like it more well done.

Grilled Street Corn

  • 4oz sour cream
  • 4 corn on the cobs
  • ½ bunch of Cilantro
  • 2 limes
  • Chili powder
  • 4 oz Cotija Cheese
  • ¼ tsp Cayenne
  • ½ tbsp Kosher Salt
  • Olive oil

Pull back the husks on the corn and remove the silk from the inside and recover with the husk. Mix together the sour cream, chopped cilantro, juice of one lime, cayenne and salt. Set aside covered.

Place the corn on a hot grill on the top rack away from the flame for about 20 min. Check on it ½ way through to check that the husks isn’t burning. Put the corn on indirect heat for another 10min.

Pull back the husks and use it as a handle. Drizzle the corn with olive oil and place on the heat so that it can get a little char. Remove when to your liking!

Slather the corn with the sour cream mixture, grated cotija cheese, and fresh lime juice. Sprinkle the top with chili powder and enjoy! It’s a little messy but delicious.

Now I know this recipe can be made a variety of ways I thought that subbing out the typical mayonnaise for refreshing sour cream would give a good cooling effect to the spices. It also holds up well to the temperature of the corn.

Summer time calls for white. We have all gotten tan and working white is a style choice that rivals all black in the SUMMER. I love to rock all white with a pop of color! I am not a fan of white shoes so adding that edge with black accessories works well for me!

Tips on Rocking White

  1. Rock a body shaper: As we all know black is slimming and white leaves nothing to the imagination. All women have bodies and they are not smooth like Barbie. Add a nude or black shaper under your all white and allow the clothing to shine.
  2. Take a look at your hemline: I am loving all the new midi lengths that are coming out. With all white try longer lengths and let your shape shine. Proportion is very important when rocking all white.
  3. Add some color: I bright lip or a tee with a graphic print will help you stand out from the sea of white.
  4. Play with your accessories: Just like all black accessories are important the accessories can change the outfits style and message. I added a wool fedora and black chunky shoes for a funky look. If I chose a very red chunky necklace and simply red shoe that look would change entirely. Do what works for you. This look is very versatile.
  5. Break necks: When rocking all white you will grab attention and you deserve it. Always remember the best accessory a woman can have is confidence!

In 8th grade I knew exactly what I wanted to do when I went to High School. Be on dance team!! I wanted to put on that uniform, perform for a crowd, and I imagined it being the quite possibly the coolest thing ever. Dance Team was amazing and it taught me a lot about myself, hard work and, bonding. Thinking back to dance team I can still use all those fundamentals in my daily life. I can even use it when it comes to sex lol. Some of my 1st questions about sex were answered by my more experienced dance captains and you know how it is when girls get together. Emergency Desk Kit

Since I am gearing up for a new job its about time I updated my emergency kit. You never know when an emergency will come while you are at work. SnapChat Chicken Breast

Did the demo last night on Snapchat (find me at CQuaintrelle). I am working on feeling more comfortable in front of the camera and knowing this only stays up for 24hrs gives me comfort lol. It is fun and easy to follow so take a look on Snapchat before you dive in. Here are your marching orders!

For the Chicken

  • 2 boneless skinless chicken breasts
  • ¼ cup Hummus
  • ½ cup sundried tomatoes
  • ¼ red wine
  • Salt and pepper
  • Basil
  • Butchers twine

– Cut the chicken breast in ½ creating 4 pieces and pound out to ¼” thickness

– In a small bowl combine the sundried tomatoes and red wine to reconstitute them.

– On each chicken breast spread hummus and top with a large basil leaf and sundried tomatoes. Season with salt and pepper. Roll each piece into a bundle and tie off with butchers twine.

– Heat a skillet with oil and brown off each piece for about 5min each side. Transfer to the oven to finish cooking for about 10-15min

For the Pasta

  • 2 cups Penne Pasta
  • 1 can jarred tomato sauce
  • ½ onion chopped
  • 2 cloves garlic minced
  • Rosemary, Sage, and Marjoram (or whatever fresh herbs on hand)
  • Basil (to top)

-In a pan add oil and cook off the garlic, herbs, and onion. Add the tomato sauce and allow to simmer for 15-20min.

-Meanwhile cook the pasta to the manufacturer’s directions and transfer to the sauce to allow it to finish cooking. I topped off the pasta with fresh basil.

I am a big fan of doctoring up a jarred pasta sauce. Adding in a few fresh elements can make something ordinary special for a weeknight meal.

For the Bread

  • 1 Kalamata olive ciabatta loaf
  • ½ stick of butter
  • 2 cloves of garlic chopped
  • Fig Balsalmic

-Cut the bread open lengthwise. Meanwhile in a pot combine the butter and garlic and allow to cook until the garlic is fragrant. Place the bread on a baking sheet lined with foil and pour over the butter mixture. Drizzle fig balsamic over the bread and bake for 15min in the oven until crisp.

I’d say my style personality can be a little quirky at times. Mixing patterns when done right can be amazing and when done wrong… an absolute tragedy. People it is summer and there are more colors out there and fun patterns just waiting to get mixed! From florals to stripes to polka dots and damask let’s mix it up. I’m here to show you how!

How I mix it up:

  • Use stripes as a neutral: If you’re just starting out on this pattern mixing adventure try swapping out your white tee or navy tee for stripes! The scale can be mixed up if you want to add more interest. Stripes look great with floral prints and animal prints.
  • Add something to your waist: Flannels and 90s grunge style hasn’t faded and you can jump on it for the summer by adding a flannel to your waist. Great thing is it also helped to add a little length to some very short shorts or a short skirt. Also it will be easy to throw on if the night gets cold
  • Take a look at the color wheel: Try to unify or contrast your patterns using color. Yellow, orange, and red make an analogous scheme try blue and orange together for a complementary scheme. You can mix the patterns but keep the colors unified.
  • Screen tees count as a pattern: Mix a screen tee with a different patterned bottom for an effortless I threw this on look. The screen tee is simple and the print can be small or large. Try and pick a bottom that has some of the colors of the logo on the shirt.
  • Patterned bras are your friend: I love all the new bralets and bandeaus! I am in love with my floral printed one and I love to wear it as a patterned piece. Floral also looks great with plaid, add in some ripped denim shorts (texture is a pattern too) and you’ve got it.

Pambiche Cocina

Pambiche is one of those restaurants when you walk up you know its going to be good. Located in a brightly painted funky Victorian landmark in NE Portland the building oozes cultura. They serve amazing Cuban comfort food that is fresh and flavorful. What can I say its muy delicioso!

PAMBICHE

So lets talk décor! The Victorian curves and brightly colored paint invite you in. It makes a big impression in a neighborhood that is lacking in color. Lets just say it stands out but in an amazing way! The bright murals painted on the wall gives you a sense of the Cuban identity and culture. The bright red tables for outside seating awaken your hunger. The inside is brightly painted and features an open kitchen. We were seated outside under a very hot heat lamp, which was fabulous for a nice day in Portland.

What did we eat??

Empanadas– Papa con queso, Potato and cheese pie with fresh herbs and buttered onions

Pan Frito– Pan roasted Cuban crustini, brushed with extra virgin olive oil and fresh minced garlic, served with avocado salad.

Sandwich Cubano– Cuban roast pork and smoked ham with Swiss cheese and dill pickle pressed together inside a Cuban roll. Available on whole wheat or white. Served with tostones.

We mostly came of the sandwich lol. There is nothing like the briny, smoky, crunchy taste of a Cuban sandwich. Served with yummy tostones (fried plantains) sprinkled with salt and served hot! Check it out!

I’m an Interior Designer!

When selecting your major pick something you love and you’ll never work a day in your life, probably because that field isn’t hiring lol. All jokes aside all college students will and have gone through the steps of seeing that the dream job will not happen as soon as you walk across that stage and receive that diploma. It will literally be a waiting game. How do you keep yourself encouraged? What can you do so that when the dream job comes you will be prepared?  Here is my timeline:

June 2011- GraduatedJune 2012- Got fired

Now I’m sure that road looks pretty smooth but, it was not without challenges. 1st of all I got fired from a job… ME can you believe it I’m sure you can’t because I am so loveable. Oddly that was the best thing that ever happened to me as it lead me to one of my most important resume builders. Working for a historical residential home, putting on events, all while making contacts in the interior design community. This position helped me to see things differently it helped me see that I don’t have to be a designer to be in the design community and it put me on the path of thinking that I should stay involve the best I can until the opportunity comes. So my job hunt began with any position that would put me working in design in any way. With property management I was managing vendors, editing floor plans, and staging apartments. I was also able to see remodels and learned a lot about tenant law.

POSITIVE

While working at Emerson Hardwood I learned a lot about wood lol. Mostly hardwood flooring and other milled products. It gave me a view into the construction side of things. Most importantly I was in the showroom working with designers, contractors, and homeowners giving me access to all sides. I loved helping others select the right products but, I wanted to be creative. So…. I started Creative Quaintrelle and I feel like I owe my blog some of my success. It helped me with my writing, my ability to communicate ideas, and it put me in a good mood! It also helped me to relax and pull everything I could experience wise from my job so that I could apply it to the next. I had to remind myself that I want to be creative in any way I can not only as a designer. When I let go of that control and that feeling of “it will never happen” and started having fun amazing things started to happen. When I started living life and making my life creative instead of concentrating on the one goal doors started opening, I started meeting amazing women and became more connected to Portland along the way.

I have always said to myself that I can be an interior designer it is a job I could do not just because of the skills that I have but because I love it. I just needed the chance. I have lost many things along the way but there were far better things ahead. To all of you I say have patience and trust in God. As his timing is always right. When I let go of the control in this situation he seemed to say now you are ready. Don’t give up because the talents, gifts and, goals you have are going to be used and you can’t even imagine just how great it will feel when it happens

Dear Little Sister!

WTF I would say I feel old that you are graduating but being that I am 8 years older than you this should come as no surprise to either of us. Lol I am so very proud of you and oh the places you will go and oh how I can’t wait to see all that you will do. I love you so very much and I want you to remember that when you feel like you can’t talk to anyone about what’s going on with you out there in the “real world” you always have me. Yes, I know your crazy and yes so am I but girl, I am here to save you from all of the mistakes I may have made! So lets just say I’m kind of like a crystal ball lol.

  1. Be prepared. Don’t worry girl I am going to get you prepped for all the stuff you may need for college you would be surprised how in handy an extra toothbrush can be or how a stapler can make you some ones new best friend lol. College can be hectic and especially for student athletes. So prepare yourself plan ahead. Set time aside to write in your planner, use your syllabus, and keep a snack in your bag lol
  2. Make new friends! Now I know your going to play basketball at Gonzaga and your going to have a circle of women and men around but, that is not all there is! What about the cute boy engineer or better yet the cool girl with tattoos in your Spanish class. I need you to branch out and make friends with people that are different from you. It is important to see the world from many views.
  3. If you have the chance, time, and money to study abroad, go on a trip with your friends, or go to a late night movie DO IT! The time you spend bonding with your friends and expanding your knowledge will be the times you remember. Take that trip to Vegas with the girls, go to your friend’s family’s houses for the weekend and see their hometown, go to a Spanish speaking country. These are all the things I hope for you. I want you to take advantage you will never regret any of these things.
  4. There are going to be a lot of cute boy, especially that 1st year lol. Its kind of like going to a candy story when it 1st opens or going into H&M when they just placed out the new summer clothing. Girl! I’m going to need you to not get tied down. When it’s right its right don’t force anything. Now I know you have a IDGAF attitude lol but, there will be a cute one and he will be nice and you’ll think its forever. Don’t fall for the 1st one or for that matter the second. Keep those options open!
  5. Party it up but, be responsible. I have had friends go to jail for punching a cop, get lost out on the fires escape, fall into the bushes, throw up and go back to the bar (puke and rally!!), throw up at a house party and destroy the bathroom, and cheat on their boyfriends and all of that was just the beginning. Eat some food. Its college there is booze so have some food and thank me later. Have a come together leave together attitude. My girls and I use to count off and we still do come with 7 leave with seven. Do your homework 1st! I can honestly say I was not going out if I had homework or a project. Get your homework done and then celebrate lol.
  6. Call Mom and Dad! Yes I know she is mean but, that is her way and yes I know Dad can be weird but that is his way lol. If you need something and you have used all your resources call them. Don’t call because you spent all your money at the bar… that’s when you call me lol. Call them when you have something you need like school supplies, or shampoo, or you feel like you want to come home. They love you and they got you through High School so they are not going to abandon you when you go to college.

College is an amazing time but remember I got your back! I hope you are lucky enough to meet a great group of friends that have your back and want to have fun and succeed with you! One last thing don’t get pregnant if I can make it through college and get my residents to make it through and graduate and have all my OSU girls make it there are no excuses for you. Yes I know I tell you this every day but girl, I can’t stress it enough I’m 27 and I still feel like I’m not ready lol. I love you so much and I know great things are on the horizon!!

(Not so) Many years ago your sister and I were preparing to take the same leap into the “real world” as you are now. Firstly, I’ve been hearing nothing but great things about how you have grown into such a beautiful and talented young woman and want to tell you that I am proud of you and look forward to see what great things you will accomplish in the future.

On this journey, many people will give you advice on how to become successful, how to behave as a woman, scholar, athlete, friend, sister, daughter, lover, or person in general. They will disagree with some of your decisions, they will root you on when times are good and some may go missing when times are bad. You will be faced with big decisions and challenges but also opportunities and joyous moments as well. I have learned a few things in the past 10 years that I would like to share with you.

  1.  Get to know yourself. Take some time to figure out what kind of person you want to be and not just what occupation you want to pursue. This will help you in decision making in the long run. If the opportunity presents itself where you are stuck between one thing and the other. Choose the one that will have an impact on the person you intend to be.
  2.  Be positive. About everything! Find the silver lining or the lesson in any shitty situation whether it be boy problems, classes that you cannot stand, professors that make no sense, anything. You are responsible for your own happiness and your happiness affects your willingness to get up and get things done. Never put that in the hands of someone else.
  3.  Timing. Timing is everything. Turn your papers in before the due dates, file paperwork before the cutoff date, schedule time for homework and schedule time for you to enjoy the day. Successful people measure their time by the hour and not by the days in the week. Get a planner or a board and schedule responsibilities first. In college there are a plethora of activities and it is easy to get distracted and therefor it is just as easy to become unfocused and find yourself at the library late at night cramming for a final or scrambling to BS your way through a paper.
  4.  Learn to love paperwork. No one told me being an adult would require soo much paperwork. You got taxes, W-4s, W-2s, financial aid forms, insurance forms, voting registry, class registration etc… There’s a lot of paperwork in the adult world and so I advise you to embrace it and learn to keep your most important documents neat and organized.
  5.  Network. I’m sure you’ve heard the saying, “It’s not what you know, but who you know” this is very true. You never know when you might meet someone who has the authority to put in a good word for you at a job, or recommend you to the best professors or who can get you a discount at your favorite store. Networking is a great way to meet new people and become intentional about the people you want around you. You are the sum of the 5 people you willingly surround yourself with, on that note, people change and will start to grow into their own individuality and sometimes they will no longer be able to accompany you on your journey.
  6.  Boys are fun to look at but don’t let their mouths cause you to do anything that is compromising to your goals and ambitions. Trust your instincts with this gender and try your best to not get swept away with their chatter. Trust patterns and go for the one whose actions match their words the same way they match their shoes to their outfit.
  7.  Money. Set a savings goal. Save your money and when you make your goal, turn around and invest in to an IRA, a CD, or some other type of account that will accrue interest while it sits there. 10 years from now, if you are disciplined enough not to touch it, you will be glad you did.
  8.  Take notes. You will not remember and yes you should write things down. Post it notes are friends
  9. Find good study buddies. Outside of friends, find study buddies who are passionate in the classes you take, and do not fear the tutoring centering.
  10. Phone home. Remember to communicate with family they are and always will be the people to care for you the most.

Other miscellaneous things to remember I’ve learned:

Ramen is the food of champions and college kids. Get a good pillow and soft sheets. Heels make trekking to class difficult. You can never have too many pairs of socks or underwear. Pajamas are acceptable in the classroom. Brown nosing teachers never hurts the grade. ASK QUESTIONS if you feel you are misunderstanding something. Seek respect rather than attention. Take pictures. Get organized. Get a good alarm clock. Remember to set the alarm clock. Keep snacks on hand at all times. Hand sanitizer!!

Words to get to know and utilize in your life:

Integrity – Doing the right thing because it is right

Reciprocity – The text book definition is to exchange for mutual benefit. I say reciprocity to remind you to surround yourself with people who are willing to give as much as they take from you.

Understanding – Things will go awry and people will not always do as you hope.

Above all things remember this.

You do not need anyone else’s permission to be happy or to do the right thing.

I wish you well on your adventure and anticipate to continue to hear nothing but great things about you in the future. It’s been a long time since I’ve seen you last but never forget that you could always contact me if need anything. Congratulations on your graduation doll!

Dear Z,

So excited and proud of you for all of your accomplishments. College is definitely an experience. Just imagine high school but bigger and more people that you don’t know. It sounds a little scary, and it is at first, but as you get used to the changes, it gets easier. Here are some words of wisdom that were shared with me and some that I wish other people told me that I found out the hard way.

1)     You don’t have to go to class, they post all the lectures online and they don’t take attendance

-There’s pros and cons to this: No they don’t take attendance in most classes so you don’t HAVE to go… but unless you don’t feel well or something comes up that you really don’t want to miss, I would suggest you go to class. I would rather sit in  class for an hour and have someone go over stuff for me then to try to learn it all on my own. Plus you meet people in class that will help you get through it, because trust me, you are not the only one struggling.

2)     Don’t be shy! Meet new people, join groups, get involved. Don’t restrict your circle to certain people. You will benefit and learn a lot from the people you meet in college. Many relationships will only last for a quarter or two if you have the same classes but some of my closest friends now are the ones I met in college.

3)     Study groups are great IF you can study with other people but it isn’t for everyone. Everyone will continue to tell you the only way to pass is to form a study group but do what works best for you. Don’t get me wrong, study groups are helpful but some people learn better on their own.

4)     Study! Put time aside to study… on your own, or with some friends. My friends and I would all go to the library together and get a study room. We weren’t in the same classes but it was helpful to have people around you studying so that you don’t get too discouraged

5)     Don’t change your answer on exams!!! I still remind myself not to do it till this day. Definitely go over your answers but if you are unsure about it, stick to your gut

6)     Use ratemyprofessor.com to see what to expect with the class. Unless you don’t have any other choice, try to get a teacher with good ratings and reviews. People are pretty honest on there.

7)     Check the map of where your classes are. I am lazy so when making my schedule, I would look at the times and the location of the class some classrooms were far for no reason. And I made sure I had enough time to get from one class to the other. 10 mins isn’t always a whole lot of time to walk across campus, and you want to make sure you have time to eat.

8)     Don’t be intimidated by your professors or TA’s. Shit happens and sometimes things are just out of your control. Email them or go to office hours, a lot of them are more understanding that you think, but don’t give them any bs stories, they will see right through your shit.

9)     Pay attention in class… if you are going to waste the time to go, you mind as well learn while you are there. I always sat in the front of class so I wouldn’t be tempted to be on my phone, laptop or fall asleep. Personally, I learned more in class than reading all the material. They teach you what they want you to know, the books are for further reference or clarification.

10) HAVE FUN! This is the last chance before you have real adult priorities that may hinder your fun so take advantage of it! Balance school work, sports and having fun. Make time for yourself and your friends. Party but party smart, know what you are drinking and eating.

There are a million other things I’m sure other people will also include. College is fun but you are also there for a purpose, don’t look back on it and think I wasted 4 years of my life.

One last thing, if you can help it… don’t fall for the first guy you think is amazing. You will meet so many people from all over. Keep your options open Z if the right one comes along, you will know. Good luck and best of wishes on your new journey… we might have to come crash your parties some times and pretend like we are young again haha!
